Raw Vegan Matcha Cake

  • Dough:
    • 130g almonds
    • 4 spoons of raisins
    • 1 spoon of coconut oil
    • Cinnamon
  • Coconut white layer:
    • 150g cashew nuts
    • 4 spoons of coconut oil
    • 5 spoons of grated coconut
    • 3 spoons of agáve syrup
    • Salt
  • Matcha green layer:
    • 250g cashew nuts
    • 4 spoons of coconut oil
    • 4-5 spoons of agave syrup
    • Few mint leaves
    • 2-4 spoons of matcha tea
    • 1 lime
    • salt

  1. All the cashew nuts souk in water and let rest over night.
  2. Mix all the dry ingredients for dough, add coconut oil and mix together.
  3. Use a baking form with 15 cm diametr and fill with the dough. Use coconut oil form the form or baking paper before.
  4. Mix ingredients for white layer and fill onto dough, let rest in the fridge.
  5. Mix ingredients for the second matcha layer and add onto dough.
  6. Let rest overnight in the fridge. Decorate with matcha powder and mint leaves.
  7. Tip: cut with the wet knife.
